Rice krispie treats are my absolute all time favourite treat and I don’t make it nearly often enough. I remember them from my own childhood and even now as an adult I find it hard to refuse. I’ve learnt a couple of tricks from @thekitchn that will elevate this children’s treat to the next level. The first is to lightly toast the rice krispies before you start and the second is to brown the butter. Both those things give it a nutty and toasty taste that is hard to describe but once you’ve tried it you’ll never be able to make it any other way. I also always use the best vanilla I can afford, it makes a huge difference in the taste. And salt! The salt enhances all of the flavours. Also, don’t squish the mixture down too hard, just lightly pat it down in the tin, this helps make it airy and chewy. The Cake: Superhero chocolate cake with gummy bears in the centre (as requested by the birthday boy) 🦸🏻‍♂️ The Story: It is one of the great joys in my life to bring my children’s dreams to life with baking. And it has (gleefully) become a bit of a tradition for Hadleigh and I to go on Pinterest and scroll through cakes and themes and parties until he finds something he loves. I am painfully aware of the insane talent that is out there and my own cake limitations, and that I definitely can’t make ANYthing he points out. But I also don’t take the privilege lightly that there are a few things that I CAN make, not always perfectly, but in his eyes turns out to be the greatest thing on earth. What an honour! And the look on his face when he came downstairs this morning and saw his cake I will treasure in my heart for a long time. This guy. Today he is six. He is our first and there has been many times that I wished that we could have had a test run on something other than our actual kid. Despite our many shortcomings as parents our beautiful boy is turning into quite the amazing young man. I am absolutely astonished at how he is growing and learning and showering the world with his love. And my constant inquisitive companion in the kitchen! Seriously proud of this one. I have surprised myself with how much my love for him keeps growing every day. One of my greatest gifts from God 😌
The Cake: MINT CHOC CHIP 🍃🍫 chocolate cake layered with mint chocolate chip swiss meringue buttercream and crushed mint aero pieces topped with a dark chocolate drip, more crushed aero and a few of the new @lindt_australia milk mint chocolate balls 🤤 The Story: Father’s Day. My husband is a man of few words (sometimes too few!) he’s not one for fuss or presents or cards or lots of adjectives. He carries our family on his shoulders, he picks up the slack without being asked and never nags about it, he makes dinner when I am too tired, he does the laundry because I always leave it to when nobody has anything clean to wear, he builds legos with the boys and teaches them how to kick a ball, he comes and cleans up the chaos I leave behind after baking, he looks after all of our finances and budgets always making sure bills are paid on time and registrations are done because I hate dealing with money, he cleans the really gross things I refuse to and he never, ever complains about any of that or asks for a medal. Cheesecake-to-go 🍋 🏃🏻‍♀️ A really quick and easy dessert to pack for a picnic or to take on the go. It can be made in any leakproof container and needs about an hour in the fridge to set. You can even make it a day ahead and just keep in the fridge. You can also swap the curd with fresh fruit. . . . Ingredients: Makes 4-6 1 cup cream cheese 1 tsp vanilla extract ¼ cup castor sugar ½ cup thickened cream 100g shortbread biscuits 50g butter, melted Lemon curd Directions: - To make the crumble: Pre-heat your oven to 180°C. - In a foodprocessor (or by hand) blitz the shortbread biscuits into a fine crumb and stir in melted butter. - Spread the crumbs evenly on a baking tray and bake for about 10 minutes. - Remove from the oven and let it cool, it will turn into a delicious crunchy and buttery crumble. - To make the cheesecake filling: Beat together the cream cheese, vanilla extract and castor sugar until smooth. - In a separate bowl, beat the cream until it soft peaks form and fold this into the cream cheese mixture. - Mix it until it is smooth with no lumps and scoop into a piping bag (or ziplock bag). - To layer the cheesecake: Pipe a layer of cheesecake filling into the bottom of the jar (or glass bowl) and use the back of a spoon to smooth and even the layer. - Gently pour a layer of lemon curd over the base layer and use the back of a different spoon to evenly spread it across. - Sprinkle an even layer of the crumble over the curd. - Repeat with all three layers. - Refrigerate for at least an hour for the cheesecake to set. . . . #cheesecake #lemon #lemoncurd #dessert #easydessert #recipe #littlebeanbakes
I was looking through old photos the other day and stumbled across this little nugget. I’ve always been a bit apprehensive about using chocolate transfer sheets. Tempering chocolate is something I haven’t attempted learning, it seems fiddly and I hate fiddly things. So for Hunter’s first “wild” birthday party I wanted animal print on everything!! I saw these darling leopard print chocolate transfer sheets at @cakesaround and had to use them. I ended up not tempering the chocolate, and it seemed to work out okay. I used a metal ring and heated it up slightly in a bowl of hot water before cutting out the circles. There were a handful of casualties, but most survived and they turned out great. I spread the chocolate quite thick which isn’t ideal and certainly wouldn’t have been able to make beautiful dainty chocolate sails with it, but it worked for what I needed 👍 I had it in the fridge up to the last minute and then put the discs on top of chocolate cupcakes with a swirl of chocolate buttercream. . . . . . #cupcakes #chocolate #leopardprint #firstbirthday #wild #cakesaroundtown #cakesaroundtownsupplies #littlebeanbakes
The Cake: CARAMEL & PRETZEL 🥨 caramel cake layered with salted caramel swiss meringue buttercream and crushed up pretzels pieces topped with a caramel drip and a few trinkets from the beach, some native greens and a huge block of limited edition #whittakerschocolate salted caramel & pretzel chocolate. The Story: so recently I went to visit my sister, she lives in a beautiful little beach town on New Zealand’s east coast. I went to meet my adorable new nephew and went without my own kids so I had the opportunity to take lovely long (peaceful!) walks in the beach. We spent long lazy days at home snuggled under blankets, drinking coffee, she running after her kids, me watching her. Total bliss. We also had the chance to celebrate her birthday, it’s a month late but really once you hit your thirties and have kids nobody cares about your special day anymore anyway. Obviously there had to be cake and the only brief I had was ‘something with caramel’. I think I nailed it..it was pretty good..sweet, salty, caramely, crunchy 🤤 the trinkets on the top I collected from my walks on the beach, I picked up heaps of shells and when I looked through the photos realised that not even one made it onto the cake 🤦‍♀️ I kept thinking less is more, and wanted to keep it simple. The Cake: Chocolate fudge cake with a few sneaky #lindt Fruit Sensation Blueberry & Acai dark chocolate balls baked through, layered with blueberry curd & vanilla bean swiss meringue buttercream and painted with shades of blue buttercream and accents of edible gold. The Story: A few weeks ago I accidentally cut my pinky after clumsily dropping a glass bowl. It was wasn’t a big cut but something didn’t feel quite right. Just so happens I work for a hand & upper limb clinic with the best Hand Therapists in Brisbane 🖐 we also work with some amazing Orthopaedic Surgeons, one of whom kindly offered to take a look at my finger and put me on his theatre list the very next day to repair a partially severed nerve and removed a piece of glass that was left behind. This cake is a HUGE thank you to the best, nicest and kindest surgeon ever!
